The blend of coffee, chocolate, and roasted dark malt flavors with cherries is fantastic. The bitterness of a traditional Saito becomes completely undetectable, and the lightness of the cherries surprises you on the nose and in the mouth, with the typical coffee and chocolate flavors of a Saito in the mid-palate, and a hint of "wildness" in the finish that takes this wine to a new level of sensory experience. In addition, we used fermenter souring for this wine, and after adding cherry NFC juice, we inoculated the healthy yeast sludge from wild mushroom Saison fermenting in another fermenter into this Farmhouse Sour Sété, which is also a small exploration on fermentation, and provided us with some new ideas and experiences for the subsequent brewing!
