It’s brewed with local Longan Honey which is dosed at multiple times during the brewing process. The honey sugars are fermented together with the extract we recover from the malt during brewing, so the resulting beer is not sweet. We chose this specific honey due to its special aroma profile - it is not changed or lost during fermentation and gives the beer its distinctive floral aroma, reminiscent of summer.
